Swiss Water® Process is A non-toxic/non-chemical decaffeination process that uses carbon filters and water to remove 99.9% of caffeine from unroasted coffee.
The Swiss Water® Process uses a liquid called Green Coffee Extract, or GCE. This extract is created by soaking fresh, green beans in hot water for about 10 hours. This removes the caffeine and flavor molecules from the coffee. The now flavorless green beans are discarded and recycled. 
The GCE is then passed through specialized charcoal carbon filters which filters only the caffeine molecules out. The GCE will be saturated with flavor molecules that do not get filtered out. 
Filtered GCE is next introduced to a fresh batch of green beans, using the same process. However, since the GCE is saturated with flavor molecules, the coffee will maintain it’s flavor, with only the caffeine being removed. This process removes 99.9% of the caffeine, but not the coffee flavor.
